The way to BLISS via Lemon Cupcake Road
Woke up this morning after a very heavy session with my stylist yesterday and needed some emotional therapy. Pickles was in need of some yummy tummy food and I was desperate for something delicately delicious.
So this is what we got up to this morning.
My road to pure bliss:
Lemon Cupcake Recipe
Have a go, they are so easy to make and great for the kids to help you with.
Nothing beats the pure bliss of baking!!!!! Mary Berry eat your heart out.
Lemon Cupcake Recipe
120g plain flour
150g caster sugar
1 1/2 teaspoons baking powder
2 tblsp grated lemon zest
40g unsalted butter, room temp
120ml whole milk
1 egg
Frosting:
250g icing sugar
80g unsalted butter
2 tblsp grated lemon zest
a couple of drops yellow food colouring (just to be posh)
Preheat oven 170 degree c
Put flour, sugar, baking powder, lemon zest and butter in an electric mixer with paddle attachment (or use hand whisk)
Beat until you get a sandy consistency. Gradually pour in the milk and beat until just smooth
Add the egg to the mixture and continue beating until just smooth. DO NOT OVERMIX
Spoon the mixture into paper cases until two thirds full and bake for 20 – 25 mins until the sponge bounces back when touched.
Leave cupcakes to cool while you make the icing (the scrummiest part)
Lemon Frosting:
Beath together icing sugar, butter, lemon zest and food colouring. Use a medium-slow speed until the mixture is well mixed. Turn the mixer to slow and slowly pour in the milk until well mixed. Once incorporated turn the mixer onto a high speed until the frosting is beaten, the fluffier the lighter it becomes.
Once the cupcakes are cooled – ice.
TIP: If you want to you can take out a small teaspoon full of sponge per cake and add a dollop of lemon curd before you ice!!

Hhmm, i can smell the baking from here. Finished the last piece of a lemon cake i made a few days ago, and now your post has made me think of making some more.
